Pay level - 65,000 to 75,000 per annum

The senior chef de partie is responsible for the daily operations of a kitchen section. They are responsible for food quality, presentation, and portion control according to Hotel Marvell recipes and standards. They also manage the section's inventory, waste, and staff.

Reporting to the Head Chef and F+B manager

Responsibilities

  • Food quality: Ensure food is prepared and cooked to the Head chef’s instructions. Ensure the food handling of all the chefs and maintaining the highest possible standards.
  • HACCP apply necessary precautions with regards to the hotel food safety and hygiene standards.
  • Presentation: Maintain a consistent standard for food presentation. This will also include the cleanliness of the kitchen, bins, boxes, benches, and work stations.
  • Uniform: Maintain a clean and professional uniform and BBOB apron.
  • Portion control : Maintain portion control as directed by the Head chef.
  • Waste management: Manage waste and record it as necessary.
  • Inventory management: Manage the section's inventory of raw ingredients
  • Staff management: Train and delegate tasks to chefs.
  • Ordering: Assist with daily ordering, considering stock usage, menu planning, and business levels
  • Staff communication: Ensure good staff communications and relations. Provide a positive and nurturing workplace for staff to grow.
  • Menu knowledge: Help other staff acquire menu knowledge, including food allergens and dietary substitutions.
  • Energy efficiency: Help minimize the consumption of gas, electricity, and water

Other duties

  • Attend briefings / provide menu notes for service periods
  • Run the kitchen in the absence of the head or sous chefs
  • Assist other chef de parties
  • Must work well in stressful, high pressure situations, maintaining composure and objectivity.
  • Proven ability to work cohesively as part of a team in a multi-cultural, diverse environment
  • Computer literacy in MS Office applications is preferred
  • Strong work ethic, highly responsible, reliable and the ability to work shifts, extended hours including evenings, weekends and public holidays is required
