We have a fantastic opportunity for an Executive Sous Chef to join our Food and Beverage Department on a full-time basis, located at Caulfield Racecourse.
The Executive Sous Chef (Retail) is responsible for delivering consistent quality food in line with allocated financial requirements. The ability to produce a high volume of work in a timely manner, which is accurate, complete, and of the highest quality.

What will your responsibilities be?
- Preparing, cooking and serving food in accordance with menus always ensuring a high level of quality.
- Liaising with suppliers to source best products that can be used in retail environment and costs are controlled.
- Providing commercial oversight of retail offering, ensuring alignment with business objectives and market trends.
- Abiding by MRC and food safety auditing compliance including online food safety logbook, temperature checks and all other regulatory requirements.
- Assisting in creating and developing menus, product testing, specials and functions.
- Supporting leadership and development to the kitchen team to be measured by performance in engagement surveys.
- Ensuring all meals are produced efficiently and presented according to the desired quality standards specified by Executive Chef.
- Liaising with external brands and vendors to arrange pop ups for both raceday and non-raceday events
Skills & Experience
- Strong Communication and Interpersonal skills.
- Effective Time Management.
- Ability to interact positively with senior management, co-workers, members and the public to promote a team effort and always maintain a positive and professional approach.
- Hold current accreditations Cert III in Cooking, Food Handlers and First Aid certificates.
- Previous experience in a similar role, ideally in a high-volume function environment.
