WHO WE ARE

Levantine Hill Estate is a rapidly growing family-owned company, which operates a large single-site premium wine, tourism, and hospitality business in Coldstream in the Yarra Valley. Only 55 minutes from Melbourne.

The Estate spans across our three major vineyards specialising in onsite wine production, wholesale wine sales, events, restaurant and cellar door, and soon to open 33 room hotel (currently under construction). Levantine Hill's hotel will be part of the Small Luxury Hotel collection.

Our menu is mediterranean-inspired, combining the time-honoured traditions of the founding family’s ancestors with a contemporary celebration of local terroir.

WHO WE ARE LOOKING FOR

We are looking for an exceptional and energetic professional to lead a kitchen team to deliver an outstanding culinary experience at the home of Levantine Hill.

This position forms part of the senior leadership team and is responsible for managing the entire operations of the Levantine Hill food division. Your role is to manage your division of the business operations effectively, efficiently, and profitably.

Weekend work in peak seasons is absolutely essential.

A general overview of the core duties and responsibilities are set out below:

  • Work with leadership team to ensure seamless integration of food offering with guest experience and front of house operations.
  • Development of menu items across all our venues (restaurant, functions and events, and hotel breakfast).
  • Direct the kitchen activities of LHE for the achievement of short- and long-term business /policy objectives.
  • Prepare and present budgets, reports, forecasts and timelines in a timely manner.
  • Source produce, attracting sponsorships and special deals through vendor management and networking with industry bodies etc.
  • Manage the cost of goods (COGS) within company budget.
  • Oversee food production and service for all restaurant outlets. Develop menus, food purchase specifications, recipes and tasting notes.
  • Appoint and manage key personnel for the kitchen.
  • Ensure high standards of cleanliness and sanitation of production areas and employee appearance.
  • Follow and implement the highest level of food quality standards.
