PORTLAND RSL SPORT, RECREATION CLUB LIMITED also known as Portland RSL is looking for a full time Chef or Cook for their busy venue.
Located at 10 Wolgan Street in Portland, New South Wales, the Portland RSL Sport Recreation Club serves as a central hub for both community engagement and recreational activities. As a sub-branch of the Returned and Services League of Australia (RSL), the club is dedicated to supporting veterans and their families, fostering a welcoming environment for members and guests alike. The facility boasts full club amenities, including an outdoor BBQ area and a function room available for events, making it a versatile venue for various gatherings.
Inside the club, Poppies Bistro delivers a casual dining experience, open for lunch from 12:00 pm to 2:00 pm and dinner from 5:30 pm to 8:00 pm on Fridays and Saturdays, with an extended lunch service on Sundays until 3:00 pm. The bistro offers a varied menu including crowd-pleasers like roast of the day, lamb’s fry, and pastas, with takeaway options available for added convenience.
To be considered for the role you need to have a relevant industry qualification or at least 2 years' experience in a similar position.
SKILLS & EXPERIENCE:
- Must display excellent prep, cooking and plating skills
- Strong emphasis on quality and consistency of dishes
- Demonstrate a keen Interest in growing food trends and techniques
- Ability to contribute to menu planning, food cost estimation and food cost control
- Work with the management team on food preparation and seasonal menu planning
- Stock ordering
- Labour cost control and assist the owners with rostering
- A sound knowledge of food safety, hygiene and WHS and able to explain and enforce
- Immaculate presentation and grooming
- Ability to handle large service numbers
- Above average customer care and service skills
- Training of junior team members on cooking techniques and procedures
- Assist with staff hiring and training
- Planning menus, estimating food and labour costs, and ordering food supplies
- Discuss customer requirements and request with the frost on house team
- Monitoring quality of dishes at all stages of preparation and presentation
