Yousef Team Pty Ltd trading as The Lilydale General, the original contemporary cafe in Lilydale. We proudly serve Axil specialty coffee and offer an all-day breakfast, brunch, and lunch menu that caters to vegan, vegetarian, and gluten-free preferences, along with all your favorite cafe staples.

Our menu is crafted by our dedicated team of chefs, using seasonal ingredients from local Yarra Valley suppliers. Additionally, we offer a selection of wines, beers, and ciders brewed in the Valley. We've been voted the best coffee in the Yarra Ranges 2023, a testament to our exceptional quality and loyal customer base.

We are seeking a creative and experienced professional to lead our culinary team, develop innovative menus, and ensure top-tier food quality and presentation.

Job Description: We are looking for an experienced and dynamic Head Chef to lead the culinary team at our cafe. The ideal candidate will be responsible for creating menus, overseeing kitchen operations, and ensuring the highest standards of food quality and presentation.

Duties/Responsibilities:

Menu Development & Food Preparation:

● Design and regularly update menus for daily operations and special events, ensuring a balance of creativity, variety, and cost-effectiveness.

● Oversee and participate in the preparation and cooking of dishes to ensure consistency and quality.

● Ensure the incorporation of fresh, local, and seasonal ingredients wherever possible.

Kitchen Management:

● Oversee the daily operations of the kitchen, ensuring smooth workflow and timely service.

● Monitor food and labour costs, aiming for optimal efficiency and budget adherence.

● Ensure strict adherence to health and safety regulations, maintaining a clean and safe environment.

Staff Leadership & Training:

● Recruit, train, and mentor kitchen staff, fostering a culture of continuous learning and passion for culinary arts.

● Organise regular training sessions on new techniques, dishes, or kitchen equipment.

● Manage staff schedules, ensuring adequate coverage during peak times.

Inventory & Supplier Relations:

● Manage kitchen inventory, ensuring adequate stock levels while minimising wastage.

● Build and maintain strong relationships with suppliers, negotiating contracts and prices to ensure the best quality ingredients are procured.

Quality Control & Customer Feedback:

Regularly taste-test dishes to maintain a high standard of quality and consistency.

● Engage with customers, gathering feedback and making necessary adjustments to dishes or service.

Continuous Improvement:

Stay updated with the latest culinary trends, techniques, and best practices.

● Continuously seek ways to improve kitchen efficiency, reduce costs, and elevate the dining experience for patrons.

Qualifications Required:

Diploma or Certificate iv in Commercial cookery or a related field is required (or an additional 3 years of experience for those without a formal qualification).

Work Experience Required:

Minimum of 3 years of experience as a chef, with at least 1 years in a senior or head chef role.

● Proven leadership skills with a track record of managing a kitchen team effectively.

● Experience in fine dining or upscale restaurant environments are highly desirable.

Salary:

● Competitive salary range of $70,000 to $75,000 annually, depending on experience and qualifications.
