The Client
El Mexicano Kitchen & Bar is a popular Mexican restaurant in Adelaide in South Australia. They are looking to hire a full-time Chef to join their passionate kitchen team.
The Role

This is a full time role with an annual salary set at $70,000 - $80,000 depending on experience plus superannuation.
Responsibilities
- Plan, prepare, and execute a variety of menu items while ensuring high-quality standards and food safety regulations.
- Cost menu items, including food and labour costs, and procure ingredients and commodities for menu planning.
- Demonstrate expertise in a wide range of cooking techniques to produce diverse and high-quality dishes.
- Plan and sequence food preparation tasks to ensure smooth kitchen operations and timely service.
- Evaluate food products to maintain consistency and quality in taste, presentation, and portioning.
- Examine, taste, and refine all prepared dishes to enhance flavours and ensure customer satisfaction.
- Follow precise guidelines for seasoning, cooking times, and ingredient measurements to maintain recipe authenticity.
- Accommodate special dietary requirements and modify recipes as needed to meet customer needs.
- Address kitchen-related issues, respond to staff feedback, and collaborate with team members to implement solutions.
- Ensure compliance with hygiene and safety regulations, maintaining cleanliness and proper upkeep of the kitchen area.
- Work closely with kitchen staff to develop and refine new menu items.
- Ensure all dishes are properly seasoned and meet the restaurant's quality and presentation standards.
- Manage kitchen supplies, order ingredients, and oversee inventory control to prevent shortages or wastage.
- Select, train, and supervise kitchen staff, ensuring they adhere to food preparation and safety protocols.
- Lead the kitchen team in daily operations, ensuring efficiency and teamwork.
- Demonstrate and advise on portioning, plating, dressing, and garnishing of dishes for consistency.
- Monitor inventory levels and oversee the proper storage of food in controlled temperature to maintain freshness and food safety.
Requirements
To be successful in this role, you must have:
- Certificate IV qualification in commercial cookery or similar
- Minimum 2 years of experience as a Chef
- Must have at least 2 years of experience in cooking over grill
- At least 2 years of menu planning experience
- Must know how to create new recipes and design menu according to budget
- Knowledge and experience in modern Mexican cuisine is essential
- Must know how to work with dietary requirements such as vegan, and gluten free food preparation techniques
- Must be able to work with variety of proteins including beef, pork, seafood
- Experience in adherence to recipe & portion control, as well as ordering and stock control
- Ability to follow instruction & take direction
- Excellent time management and attention to detail
- Knowledge of food safety and hygiene standards
- Excellent communication skills and the ability to work as part of a team
- Be available to work on weekends to deal with many customers
