Nyaal Banyul Geelong Convention and Event Centre – Senior Manager Food, Beverage and Customer ServiceWe are seeking a highly skilled Senior Manager – Food, Beverage & Customer Service to support the General Manager – Nyaal Banyul in delivering strategic goals for Nyaal Banyul and the Victorian Convention and Event Trust (VCET).
This role enhances the customer experience through the delivery of seamless Catering, Retail, Customer and Uniform services in line with our vision and purpose.
Why Nyaal BanyulSet to open in 2026 on the Geelong Waterfront, Nyaal Banyul will be Australia’s newest convention and event centre. Operated by the Victorian Convention and Event Trust (VCET), this premier venue features a 1,000-seat theatre and 3,700 square meters of versatile event space, ready to host everything from community gatherings to major conferences and entertainment events.

About the Role
Report directly to the General Manager Nyaal Banyul, this role will enhance the customer experience through the delivery of seamless Catering, Retail, Customer Service and Uniform servicesFocus on people capability, team leadership, collaboration with internal departmentsSupport project readiness for venue openingLead the day-to-day operation of the Nyaal Banyul Food & Beverage department providing strong and visible leadership to the Catering & Retail teams, Customer Service Team and Uniform Team by driving a pursuit for excellence across all daily event operations functionsDrive engagement and collaboration with internal departments to plan and coordinate key event elementsDrive a culture of codifying processes, procedures and guidelinesKeep abreast of all food and beverage related regulations and/or legislation including HACCP, Health & Well Being and Quality AssuranceLead continual operational improvements to drive productivity, efficiency and service excellenceSet the tone for exceptional customer experience and guide and develop the Food and Beverage, Customer Service and Uniform teams in customer relations mattersDrive and develop initiatives and programs that continually improve the customer and visitor offering by uplifting employee capability, high performance and accountability.Participate in budget and forecasting meetings and manage Divisional expenses according to the budget.
About you:
Demonstrated experience in food & beverage senior leadership particularly related to the delivery of concurrent and large scale events in a multi-faceted environmentA successful track record in interpreting event information and leading a large, diverse teams to deliver to client, customer and visitor expectationsSound conceptual and analytical skills together with a proven track record of strategically managing operations within budget requirementsExperience in the delivery of outstanding customer service in a 5 star environment
