Position Responsibilities and Tasks:
- Supervise and coordinate all kitchen operations, providing clear instructions to cooks and other kitchen staff in the preparation, cooking, garnishing, and presentation of dishes.
- Determine appropriate pricing for menu items, considering ingredient costs, labour, and overhead expenses.
- Develop and refine recipes, ensuring consistent quality and appealing presentation for all dishes served to customers.
- Plan production schedules and assess staffing requirements to maintain smooth kitchen operations.
- Apply a variety of culinary techniques to create and execute a diverse range of dishes.
- Estimate the quantities and costs of ingredients and kitchen supplies required for daily and seasonal operations.
- Conduct regular inspections of supplies, kitchen equipment, and work areas to ensure cleanliness, hygiene, and optimal functionality.
- Stay abreast of culinary trends and collaborate with the cook to introduce innovative new menu items.
- Oversee the final quality control of dishes before they are served, ensuring high standards are maintained.
- Manage the procurement of kitchen equipment and ingredients, ensuring timely replenishment based on usage and projected needs.
- Participate in the recruitment process by interviewing, hiring, and training new kitchen staff.
- Implement and monitor stock rotation procedures to ensure freshness and minimize waste.
- Enforce and uphold health and safety standards, monitoring sanitation practices and ensuring compliance with regulatory requirements.
- Oversee kitchen budgeting, account management, and the creation of efficient staff rosters.
- Promptly report and follow up on any kitchen maintenance or equipment issues to ensure operational efficiency.
Qualifications and Skills:
- A Diploma in Hospitality or Commercial Cookery.
- At least 01 year of proven experience as a Chef under a fast-paced environment.
- Strong understanding of food safety standards and kitchen hygiene practices.
- Ability to efficiently run a busy kitchen environment.
- Creativity in food preparation and presentation, with an eye for detail.
- Excellent organizational and multitasking abilities under pressure.
- Ability to work as a team leader.
Salary: This is a full-time position with competitive remuneration between $73,000 - $80,000 p.a. plus superannuation for a 38-hour work week.
