Le Bouchon is an established traditional French restaurant located on the beautiful Mornington Peninsula. We are seeking a talented and experienced Chef de Partie to join our team. The ideal candidate will have at least 3 years of experience as a Chef in a French restaurant or a strong understanding of French cuisine, with experience in the cold larder, on the grill, and pans. The position is full-time
Responsibilities:
- Prepare and cook dishes according to recipes and standards
- Ensure that all food is prepared to the highest standards of hygiene and safety
- Maintain kitchen equipment and supplies
- Assist with the training of new kitchen staff
- Work closely with the Head Chef to ensure the smooth running of the kitchen
- Plan menus, estimate food and labor costs, and order food supplies
- Monitor the quality of dishes at all stages of preparation and presentation
- Demonstrate techniques and advise on cooking procedures
- Prepare and cook food on the grill, pans, and other hot sections as well as cold ladder
- Explain and enforce hygiene regulations
- May select and train staff
- May freeze and preserve foods
Qualifications:
- At least 3 years of experience as a Chef in a French restaurant or a strong understanding of French cuisine
- Excellent cooking skills, with experience in the cold larder and hot section (grill and pans)
- Excellent time management and organizational skills
- Ability to work under pressure
- Excellent communication and interpersonal skills
