Restaurant & Events Manager - Full Time

Mercure Sunshine Coast Kawana Waters is a full-service hotel with 81 rooms, 3 function rooms, restaurant and bar. The hotel is open 24/7 and caters for mainly corporate and hospital guests, but also groups and leisure travelers. Located in the heart of the Sunshine Coast next to Sunshine Coast University Hospitals.

Owned by the National Rugby League and managed by leading hospitality management company 1834 Hotels, with a current portfolio Australia-wide network of hotels, resorts, apartments, restaurants, and other venues within the hospitality and tourism sector. Reporting directly to the General Manager, this role will be responsible for coordinating and managing the day to day restaurant, bar and event services.

The key responsibilities will include:

  • Manage, facilitate and drive the service of food and beverage within the restaurant, bar and conferencing whilst minimizing costs;
  • Provide input on greater Food & Beverage strategies;
  • Actively assist their Team during service
  • Ensure that strategies are in place to allow for efficient and effective staffing of the department to achieve financial and service quality targets
  • Maintain strong team moral and effective training procedures through effective leadership;
  • Work closely with the kitchen and management to achieve; high quality service, presentation and deliver to all customers;
  • Prepare monthly restaurant and bar reports, commenting on key performance indicators and action taken to keep on target;
  • Prepare weekly and monthly forecasts for restaurant, bar and conference areas;
  • Prepare and manage weekly rosters, ensuring wage cost is controlled and guest service is not compromised;
  • Ensure all team members are well versed and have extensive knowledge of all food and beverage items and products available;
  • Manage all customer resolution issues, ensuring all feedback is actively followed up and a solution is provided;
  • Ensure cleaning and maintenance of outlets, and work areas; and
  • Ensure all team members act as ambassadors for the hotel.

The ideal candidate will have:

  • A can-do, responsible, and flexible approach to work;
  • Excellent communication skills;
  • A friendly customer service demeanor;
  • Prior experience in leading, developing and mentoring a Food & Beverage team in a bar, restaurant or hotel setting;
  • An ability to thrive under pressure and work as a team in a high paced environment;
  • A great sense of style and immaculate presentation and grooming;
  • Attainment of the necessary Responsible Service of Alcohol (RSA) Certificate;
  • Demonstrated understanding of Hospitality Industry (General) Award compliance; and
  • A strong appreciation and compliance of workplace safety.

This is a full time salaried role, working a spread of shifts over a 7 day roster; including week days, weekends, nights and public holidays.
